Last night I took the Kohlrabi challenge, to make a tasty comfort food with this alien looking veggie.
I was also given half a head of cauliflower and half a bunch of kale for inspiration...Hmmm THANKS!
As I peeled and chopped the Khol Rabi I decided on a creamy mash! I chopped a potato and added it to the pot first because potatoes take longer to cook. After 3 mins I added the Kohlrabi and after another 3 mins I added the Cauli
While that was cooking I made a quick veggie stew, starting with carrots and onions.
Add Olive oil to a pan and gently fry the onions and carrots with a generous pinch of salt until onions are translucent and browning. Then add cooked beans or mince and fry for 5 mins. Then add kale and tomato (can or jar) and stew.
Back to the mash, drain any remaining water and add 2 tbs of butter/cream, a hand full of grated cheese, a clove of chopped fresh garlic and a pinch of salt. And Bar mix.
This mash was very tasty. I then put 2 tbs of flour into the tomato based stew to thicken it. Then put the mash on top with some grated cheese. In the oven for 15-20 mins. It was very tasty. Next time I would make a pastry base.
